Ok, I swear I’ll get over this moody, metal-trays-as-background and shot-from-above styling phase. It’s just so fun tho! Ok back to topic…

Dudes! I don’t know about you, but I kinda got sick of eating the same thing for breakfast everyday, you know? Cereal-y shit and stuff, ew. So college grad. Also, since I’m in my 30s and all that, my stomach is being a little bitch and can’t take as much wheat (if any at all), so cereals and breads are out of the question. Great. Just fucking great.

But hooooold up. I have met salvation! Her name is Chia Breakfast Parfait. I know some peeps put a crap load of stuff in their morning cereal and smoothie (some are EXCESSIVE!) and I am no doctor, but I bet it ain’t good for your gut to receive such a punch so early in the day! Hence, these breakfast parfaits are just purrrfect; they’re super easy to make, and contain a few wholesome ingredients that will perk up your mornin’

K, let’s do this.

Chia Breakfast Parfaits | The Artful Desperado

Chia Breakfast Parfaits

To make an orange banana parfait you’ll need:

– 1 tablespoon of chia seeds (SECRET: I found mine at the baking section and was cheaper than in the supplement section! HA! Suckers).
– 2 bananas
– Juice of 1 orange
– Cooked oatmeal (cooked or soaked overnight work)
– 1 tablespoon of unsweetened shredded coconut
– A drop of natural vanilla essence
– Pomegranate to garnish (optional)

Portions may vary depending on your container. Just eye ball it!

1. Make the chia jelly: Place the bananas, orange juice, vanilla, and chia seeds in a blender and puree that shiz until it’s nice and creamy. You can add a touch of honey for extra sweetness.
2. Mix the cooked oatmeal with the coconut.
3. Layer your parfait: use a jar and place some of the oatmeal in it, then add a bit of the banana mix, add the rest of the oatmeal and top it all up with the banana mix. Sprinkle coconut and pomegranate to garnish. Pack and go!

NOTE: I also added a touch of yogurt to mine. Love me some tartness.

To make a blueberry/blackberry parfait you’ll need:

Same ingredients and steps as above but for the chia jelly substitute the fruit for blackberries, blueberries, and the juice of half a lemon.

See, how easy was that! And so yummy! If you’re not into oatmeal, you can use quinoa flakes, buckwheat, or spelt flakes. Whatever your heart desires.

K, drop that croissant, slap yourself in the face and go eat a healthy breaky!

    i sprinkle chia seeds in my smoothie every morning but will have to give this a try :)

    I’m with you…I prefer to save my gluten tendencies for some incredible bread or pizza once and awhile. I know I should be eating more chia seeds, however, I cannot do the chia jelly and I also try to avoid dairy (for same reasons as gluten) so instead of yogurt I like to mix the chia in coconut milk. The jelly is more palatable that way, plus I can enjoy a great cheese or two on occasion if I avoid dairy.
