Beer Roasted Chicken with Chipotle Chimichurri

Drooooling!? I know, this chicken is quite SEXY. I’ve been roasting chickens at home all winter long, but my usual mix of spices is pepper, lemon, and thyme, easy peasy. This time I wanted to heat things up and make something a bit more smoky, and spicy. Cue all the chipotle in the world!

I made this recipe for my dudes at West Elm and repeated it a couple times since then. It’s the perfect “in between dish” for times like this when the weather is being a total asshole, you know? One minute sunshine, then you go in the shade and gets so cold that your nippled rip through your shirt…dramatic? Just a bit haha.

On another note, I am working on the revamp of my site – yay! – it will continue to be artful desperado but a bit more sleek and presh. I initially thought of doing the whole thing in millennial pink, but, that probably will backfire at some point (still love that colour tho haha).
